Ever wondered about the French paradox: How do the French stay so slim while loading up on carbs, cream, butter and cheese? The truth is that not all French people eat inordinate amounts of these things every day. Tartiflette, for example, is one of those meals they only enjoy in the wintertime. Originating in the eastern Savoy region of France, this baked gratin dish of sliced potatoes layered with reblochon cheese, lardons and onions is every bit as comforting as it looks and sounds, often served with the entire round of cheese on top (reblochon has a 45% fat content). It's creamy, cheesy, salty and utterly delicious.
