8) "Bake" Your Potatoes in the Microwave

When you want to serve a baked potato as a side or as a fully loaded main dish, skip baking it in the oven, which can take up to 1 hour + preheating time. Instead, just pierce your potatoes with a fork as usual, place on a microwave-safe dish, and set the cooking time according to the number of potatoes you have: 7-8 minutes for one, 10-12 for two, 14-18 minutes for four. To check for doneness, gently squeeze the sides. If they give easily, they're ready. If not, put them back in the microwave for 1-minute increments until done.

  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
