Easy No-Cook Recipes to Deal with Summer Heatwaves

Fruit salad

Fruit salad is a great dessert for hot days that provides you with all the important vitamins. You can prepare it pretty much any way you want, but if you're looking for a quick and easy recipe, try this one!

Serves 10

  • 1 lb fresh watermelon, chopped
  • 1 lb fresh pineapple, chopped
  • 12 oz. fresh blueberries
  • 12 oz. apples, chopped
  • 4 kiwis, peeled and chopped
  • 3 nectarines, chopped

For the dressing:

  • 1.5 tbsp lime juice
  • 1/4 cup honey
  • 2 tsp lime zest

Instructions

  1. Add all the fruits to a large serving bowl.
  2. In a small bowl, whisk together the dressing ingredients.
  3. Pour the dressing over the fruits, and toss well to coat. Serve immediately or let chill in the fridge for a few hours.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
