Easy No-Cook Recipes to Deal with Summer Heatwaves

Tiramisu

Here's a cold Italian dessert for coffee-lovers: classic tiramisu. Make this delicious treat ahead of your next summer get-together, and let it sit in the fridge to deepen the flavors.

Serves 12

  • 3 large egg yolks, chilled
  • 1 cup powdered sugar, sifted
  • 2 1/4 cups mascarpone, chilled
  • 1/2 cup brewed espresso or strong coffee, cooled
  • 27 ladyfingers
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Beat the egg yolks with the powdered sugar using an electric mixer until creamy (2-3 minutes).
  2. Add the mascarpone, and mix for 1 minute more until smooth and creamy.
  3. Briefly soak the ladyfingers in the coffee on both sides, and arrange a layer of them in a 9 x 7 x 3-inch baking dish.
  4. Top with 1/3 of the mascarpone preparation, using a spatula to smooth it over.
  5. Add another layer of ladyfingers, and another 1/3 of the mascarpone preparation. Smooth out the surface.
  6. Add a final layer of ladyfingers, and top with the remaining mascarpone preparation. Smooth out the surface.
  7. Place in the fridge, and let sit overnight for best results.
  8. Dust with the unsweetened cocoa powder just before serving. Enjoy!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
