Easy No-Cook Recipes to Deal with Summer Heatwaves

Tuna tartar with avocado and cherry tomatoes

As a festive starter or main course, this layered tuna tartare not only looks elegant, but it also tastes incredibly delicious. It's made with everyday ingredients, and you won't even break a sweat making it.

Serves 4

  • 8 oz. canned tuna, drained and flaked
  • 6 tbsp mayonnaise
  • 2 tbsp fresh parsley, chopped
  • 1 1/3 cups cherry tomatoes, quartered
  • 3 ripe avocados, peeled, cored and halved
  • 1 1/2 limes, juiced
  • Olive oil, as needed
  • Salt & pepper to taste
  • More fresh parsley to garnish

Instructions

  1. Add the tuna to a bowl with the mayonnaise and chopped parsley. Season with salt and pepper to taste, and mix well to combine.
  2. Add the cherry tomatoes to another bowl and season with salt and pepper. Add a touch of olive oil, and stir to coat. Add the juice of half a lime, and set aside.
  3. Add the avocado halves to another bowl, and mash with a fork. Season with salt and pepper, and stir in the remaining lime juice.
  4. Place a 3-inch ring mold on a plate, and add 2-3 tablespoons of mashed avocado. Smooth the surface with the back of a spoon.
  5. Add a few tablespoons of the tuna mixture on top, and smooth the surface again with the spoon.
  6. Finally, arrange a pile of tomatoes on top.
  7. Remove the ring mold and garnish with fresh parsley leaves, if desired.

  8. Repeat steps 4 to 7 with the remaining ingredients, and serve immediately.

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
