Easy No-Cook Recipes to Deal with Summer Heatwaves

Cherry & goat cheese salad

This tangy, sweet and savory salad is the perfect refreshing meal on any hot summer's day. With minimal prep and maximum flavor, you'll want to make it again and again.

Serves 4

  • 6 oz. baby arugula
  • 16 fresh, roasted or candied cherries
  • 1/4 cup almonds, toasted and finely chopped
  • 1 tsp balsamic vinegar
  • 1 tbsp sherry vinegar
  • 3 tbsp olive oil
  • Salt
  • Freshly cracked black pepper
  • 2 oz. goat cheese, chopped

Instructions

  1. Add the arugula to a mixing bowl.
  2. Whisk together the balsamic vinegar, sherry vinegar, olive oil, salt and freshly cracked black pepper until combined.
  3. Toss the arugula with the dressing until coated. Distribute the arugula evenly among 4 plates. 
  4. Top evenly with the cherries, almonds and goat cheese. Serve immediately.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
