Brussels Sprouts

Brussels sprouts are one of those vegetables you either love or hate, but there's plenty to love about this cruciferous and highly nutritious veggie. With a subtle, earthy flavor, they can be consumed raw but are best when cooked, as they take on a lightly sweet flavor and tender texture. If overcooked, however, they become mushy and and release an unpleasant odor that's caused by sulfur-containing compounds (just keep an eye on them). Brussels sprouts can be roasted, steamed, fried, boiled, stir fried, grilled, slow cooked, sautéed or blanched briefly before being cooked in a pan.

Cooking ideas: baked into cheesy gratins; roasted on their own or with other veggies, garlic and herbs in olive oil; shredded raw into salads; wrapped in bacon and baked; sautéed with aromatics, vinegar and olive oil; braised on the stovetop with garlic in a bit of stock.
