Choose the right tools

Once the meat is seared, the herbs become fragrant, and you've added the cooking liquid (wine, beer or broth), bring the mixture to a boil. Then, transfer everything to your slow cooker, and cook on low. Or use a Dutch oven, and lower the heat until the liquid is barely simmering. If using a Dutch oven, leave on the stove. Once the pot is fully warmed, gradually lower the heat. Or place in the oven at 300 to 350 °F. The easiest option would probably be to use a slow-cooker, which allows you to sear the meat and stew it at the same time. All you have to do is cover and turn the heat to low. It doesn't require much surveillance, consumes little energy and will keep your stew warm all day until you get home.

Method

  1. Fry the bacon in a skillet, then add onion, and meat.
  2. Add tomato paste, bell peppers, garlic and salt, and simmer till cooked through
  3. Boil 1 whole cabbage head in salted water till tender
  4. Spoon mixture into individual cabbage leaves, and fold carefully to form little rolls
  5. Serve with any remaining mixture
