For holiday meals, you really only need one big meat main to satisfy everyone (turkey, ham, beef roast). That means you have tons of options for vegan-friendly sides, full of nutritious veggies that can be prepared in myriad ways. If you're feeling overwhelmed with the food prep, simply opt for a huge sheet pan of beautiful, roasted veggies. Before roasting, chop them into large chunks, drizzle with olive oil, and add lots of seasonings and fresh herbs for extra flavor. Not only will this help bring more balance to the festivities, but it also means all your loved ones will be able to eat most of what's on the table.
