- Ingredients
- 1 Roasting Chicken (3-4 Lbs)
- 2-3 tablespoons Kosher Salt
- 1 Lemon (Pierced all over)

- 2 large Carrots (Peeled and cut into thirds horizontally)
- 1 stalk Celery (Cut into thirds horizontally)

- 4 cups Chicken Stock (more as needed)

- 2 slices of bacon (not smoked, salt pork)
- 2 bay leaf
- 1 cup chopped onion
- 1 cup chopped celery
- 2 cups potato
- 1 cup carrot (can replace with another cup of potato)
- 4 cups half and half (mix 1/4 cup whipping cream to 3/4 cup whole milk per cup)
- 2 cans chicken broth (no salt)
- 2 cans clams with liquid
- 1 can of hot water
- 1 can worth of mini scallops (can replace with a 3rd can of clams)
- 1/3 cup of butter
- 1/2 cup of flour

- 1-1/2 lbs boneless, skinless chicken breasts
- 32 oz. fat-free reduced sodium chicken broth
- 1/2 c water
- 2 tbsp apple cider vinegar
- 1 tsp dried parsley flakes
- 1-1/2 tsp minced garlic
- 1 c yellow onion, chopped
- Approx. 3 stalks (193g) celery, chopped
- 3 medium carrots (268g), sliced into “coins”
- 3 small (430g) fuji apples, chopped
- 2 Chorizo sausages, sliced into “coins” (I used Klement’s)
