Bacon Wrapped Barbecue Burgers

arrange bacon on a paper towel-lined microwave safe plate
- 8 bacon slices
- 1 jar slices mushrooms, drained and chopped
- 1/2 cup chopped vidalia onion
- 2 tsp olive oil
- 1/2 cup bottled honey barbecue sauce, divided
- 1 1/2 pounds ground beef
- wooden picks
- 1/4 tsp salt
- 4 sesame seed hamburger buns, toasted
Barbados Pork Tenderloin or Roast

A sweet, spicy, super juicy and delicious pork rub
- 3 lb boneless Pork roast or loin
- 1 Tbsp ground Cumin
- 1 Tbsp Chili powder
- 1 1/2 tsp ground Coriander
- 1 tsp Red Pepper
- 1 1/2 tsp Black Pepper
- 3/4 tsp Cinnamon
- 1/4 cup Brown Sugar
- 1/2 tsp Salt
COMFORTING CHICKEN

In skillet, heat oil and margarine
- 1 tbs. oil
- 1 tbs. margarine
- 1 lb. chicken breasts, boneless & skinless, cubed
- 1/2 C. onion, finely chopped
- 1/2 C. green pepper, finely chopped
- 1 C. condensed cream of mushroom soup, undiluted (10 3/4 oz.)
- 1 C. water
- 3/4 C. rice, uncooked
- 1/2 teas. salt
- 1/2 teas. chili powder
- 1/4 teas. pepper
- 1/4 teas. paprika
Brined and Roasted Turkey

To Brine: dissolve the salt and sugar in 2 gallons of cold water in a non-reactive container
- BRINE
- 1 cup salt
- 1 cup brown sugar
- 2 oranges, quartered
- 2 lemons, quartered
- 6 sprigs of thyme
- 4 sprigs of Rosemary
- TURKEY
- 1 turkey
- 4 Tbsp butter at room temperature
- 1 large yellow onion, cut into 8ths
- 1 large orange, cut into 8ths
- 1 stalk celery, cut into 1 inch pieces
- 1 large carrot, cut into 1 inch pieces
- 2 bay leaves
- 2 springs thyme
- 1 1/2 to 2 cups chicken or turkey stock.
- TURKEY BROTH
- 1 Tbsp vegetable oil
- Reserved turkey neck and giblets
- 1 large carrot, coarsely chopped
- 1 onion, coarsely chopped
- 1 large celery stalk, coarsely chopped
- 1 bay leaf
- 3 cups turkey or chicken stock
- 3 cups water
- GRAVY
- 4 cups turkey broth
- 1 cup dry white wine
- 4 Tbsp butter
- 1/4 cup flour
- salt and freshly ground black pepper

- 2 lbs ground beef or ground turkey, ground turkey is healthier,1lb ground park,1can cream of mushroom,1 can cream of celery,2 large onions chopped,1 large can of chicken broth are if available fresh chicken stock.1 bell pepper chopped, seasoning of choice I prefer Tony's but if not available salt pepper will do. 2 cups of rice.

- 8 oz monterey jack
- 3 TSP poppy seeds
