This is one of my favorite recipes I am posting again from last summer, my italian caprese kabobs, I love making th
- 16 small fresh mozzarella balls
- 16 fresh basil leaves
- 16 cherry tomatoes
- Extra-virgin olive oil, to drizzle and balsamic
- Coarse salt & freshly ground pepper, to taste

Ciao! Italian flag popsicles!
- (10 (2.5 oz.) Pops) for the red layer:
- 2 cups fresh strawberries, hulled & quartered + a couple extra, chopped (optional)
- 1/2 cup simple syrup
- 1 tablespoon freshly squeezed lemon juice
- pinch of fine sea salt
- for the white layer:
- 6.25 fluid ounce (just over 3/4 cup) canned coconut milk
- 7 fluid ounce (scant cup) sweetened condensed milk
- 1/3 cup half-and-half
- big pinch fine sea salt
- big splash pure vanilla extract
- 1/4 cup + 2 tablespoons unsweetened, shredded coconut
- for the green layer:
- 1 avocado, pitted & scooped out of peel
- 1 cup chopped kale (leaves only, packed)
- 1/2 cup simple syrup (more or less, to taste)**
- 2 tablespoons freshly squeezed lime juice
- pinch of sea salt
- 6-8 tablespoons coconut water (or milk of any variety - cow, coconut, almond, rice, soy)

- 3/4 cup balsamic vinegar
- 2 teaspoons freshly ground black peppercorns
- 2 large fresh peaches with peel, halved and pitted

Recipe for a tri-color homemade ravioli to represent the colors of the Italian flag
- 1-1/2 cups all-purpose flour
- 2 eggs ( for a healthier version I use egg beaters)
- ΒΌ teaspoon salt
- 1-2 tablespoons water (as needed)
- Canned beets
- Spinach
"Skinny" Italian Pasta Salad

Here is a lighter version of the traditional italian pasta salad
- 1 pound whole wheat short pasta, such as fusili, bowtie or penne
- 1 pint cherry or grape tomatoes, halved
- 1 cup pearl-sized fresh mozzarella, drained
- 1/4 pound salami, ( I use turkey salami) sliced about as wide as the pasta you are using
- 1/2 red onion, thinly sliced
- 1/2 cup loosely packed basil leaves, julienned
- 1/4 cup balsamic vinegar
- 2 to 3 tablespoons extra-virgin olive oil (use the lower amount if you prefer a more tart dressing)
- 2 teaspoons Dijon mustard
- 1/2 teaspoon fine-grain sea salt
- 1/2 teaspoon crushed red pepper flakes

- 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
- 1/2 cup extra virgin olive oil
- 1/3 cup pine nuts
- 3 medium sized fresh garlic cloves, minced
Easy Marinated Tuscan Chicken

Rub chicken with olive oil put in plastic bag overnight add juice of 2 lemons, 3 tbs minced garlic, 1/4 cup chopped
- This is a healthy grilled flavorful chicken, yup that's what's for dinner tonight
- 1 (3lb) whole chicken

- 5 cloves garlic

So yesterday I went to my friend's garden and got a TON of cherry tomatoes
- 1 c all-purpose flour
- 1/2 c whole wheat flour
- pinch of salt
- 1 t dried Italian seasoning
- 5 T unsalted butter, fat free! cold and cut into cubes
- 2 T shortening, cold and cut into cubes
- 1/2 c skim milk
- 2 1/2 pints heirloom cherry tomatoes
- 2 T fresh basil, cut into chiffonade (thin strips)
- 1 T evoo (extra virgin olive oil)
