One Pan Roasted Chicken and Potatoes

I make this roasted chicken a lot
- 1 whole roaster or over stuffer chicken (giblets removed)
- 1/4 cup olive oil
- Kosher salt
- Ground black pepper
- Fresh thyme
- Garlic powder
- Paprika
- 1 small sliced red onion
- 1 large carrot peeled and chopped
- 5 large potatoes washed and cut into bite sized chunks
- 1 celery stalk cut into small chunks
- 1 handful fresh trimmed string beans
- 1/2 cup cherry tomatoes
- 2 tablespoons white vinegar

Here's my take on the classic smoked salmon dish
- 1 pound fresh smoked salmon
- 1 small bunch fresh dill
- 1 cup cream cheese
- 2 tablespoons capers
- 1 thinly sliced red onion
- 1 thinly sliced tomato
- 5 slices of your favorite toasted bread
- 1 teaspoon green all purpose seasoning
Cheddar Stuffed Turkey Meatballs

I love these meatballs. They're so decadent and cheesy without all the calories of ground beef
- 2 pounds ground turkey
- 1 8oz block of sharp cheddar cut in 1 inch cubes
- Salt
- Ground black pepper
- 1/4 teaspoon ground yellow curry powder
- 1/4 cup plain breadcrumbs
- 2 eggs
- Parsley
- 1 tablespoon minced onion
- 1 tablespoon minced garlic
Curry Potato & Pea Stew

I love this savory hearty stew in the winter
- 3 pounds washed, cut potatoes peeled and cut in 1 inch cubes
- 2 medium sweet potatoes, peeled and cut in 1 inch cubes
- 1 drained can of sweet peas
- 1 large chopped red onion
- 5 sprigs of fresh thyme
- 1 tablespoon of ground yellow curry powder
- Kosher salt
- Ground black pepper
- 1 tablespoon minced garlic
- 1/4 cup extra virgin olive oil
Chicken Parmesan Farfalle

Season the chicken cutlets with a dash of salt and pepper
- 2 pounds boneless chicken cutlets cut in thin steaks
- 1 cup Italian breadcrumbs
- 1 cup Parmesan cheese
- 1 egg
- 1 cup asiago cheese
- 1 box Farfalle pasta (bow tie)
- 1 tablespoon minced garlic
- 1 tablespoon minced onion
- 1 tablespoon Italian seasoning
- 1 cup extra virgin olive oil
- 1 jar of your favorite marinara sauce
- 1 teaspoon sugar
- Kosher salt
- Ground black pepper
- Fresh basil

Chili Garlic Lime Shrimp

Mix everything well in a large glass bowl
- 2 pounds steams jumbo shrimp
- 2 tablespoons minced Garlic
- Juice of 2 fresh limes
- 1 teaspoon lime zest
- 3 tablespoons chilli oil
- 1 teaspoon red pepper flakes
- 1 dash salt
- 1 dash ground black pepper
