Lamb, Feta, and Caramelised Onion Pizza

Make the pizza base according to the instructions
- Pizza Base
- Tomato paste (about 4 Tbsp, but depends on your taste)
- 1 Cup grated cheese (Edam, cheddar, mozzarella...)
- 400 g lamb mince
- 1 cloves garlic, finely grated or crushed
- 100 g feta, (I used reduced fat)
- 1 Cup Caramelised Onions
- 2 tsp dried chilli flakes
- 2 tsp dried mixed herbs
Pizza Dough

A super simple pizza base recipe
- 1/2 Cup lukewarm water
- 1/2 tsp sugar
- 1 1/2 tsp dried active yeast
- 1 Cup plain flour (wholemeal flour works well too)
- 1/2 tsp salt
- 1 Tbsp olive oil
Creamy Vanilla Cheesecake

A simple no bake cheesecake
- 250 g plain vanilla biscuits
- 100 g butter, melted
- 2 Tbsp boiling water
- 500 g cream cheese
- 1/3 Cup caster sugar
- 3 tsp vanilla paste
- 1 cup cream, whipped
- Fresh berries (frozen and defrosted would be fine too!) - I used fresh strawberries and raspberries
- Glaze - 1/2 cup strawberry (or your preferred berry) jam melted into 2 Tbsp hot water
Chocolate Peanut Butter Fudge

Line a 20 cm pan with baking paper
- 1/2 Tin (200 g) Lite condensed milk
- 100 g butter
- 1 Cup brown sugar
- 1/2 Cup peanut butter
- 100 g milk chocolate, chopped
Whiskey Chocolate Truffles

1. Heat the cream in a saucepan over a medium/low heat, being careful not to burn
- 1/4 Cup cream
- 3/4 Cup dark chocolate chips
- 2 Tbsp butter
- 2 Tbsp Whiskey
- 1/2 Cup dark chocolate chips, melted (may need extra)
- 1 Cup chopped peanuts
Sweet Chili Chicken

A simple and satisfying chicken stirfry
- 500 g skinless chicken breast, sliced
- 1/3 Cup sweet chilli sauce
- 1/4 Cup soy sauce
- 2 Tbsp Rice wine vinegar
- 1 Onion, diced
- 1 Red bell pepper, sliced
- 4 Cloves garlic, finely diced
- 1 red chilli, deseeded and finely diced
- 1 carrot, diced or sliced
- Enough cooked brown or white rice for four to serve
Raspberry Orange Smoothie

Perfect for a hot day, both refreshing and simple to prepare
- 1 Cup frozen raspberries
- 1 Cup orange juice (I actually used orange and mango and it was amazing!)
- 1/2 Cup light Greek yogurt
- About 5 ice cubes, smashed up a little
- 1 Tbsp sweetener (I used Stevia, normal sugar would be fine too)

- 400 g beef mince
- 3 cloves garlic, finely grated or crushed
- 1 onion, finely diced
- 1 red chilli, de-seeded and finely diced
- 1 Cup uncooked, rinsed quinoa
- 1 1/2 Cups beef stock
- 400 g can diced tomatoes
- 400 g can red kidney beans, drained
- Salt and Pepper
- 2 Spring onions, sliced
Mushroom Soup

The nice thing about soups is that they are so easy to prepare
- 600 g Mushrooms, roughly chopped (I used white button and Portabello)
- 2 Tbsp Oil (I used canola, whatever you prefer would work just fine)
- 1 Onion, chopped
- 4 cloves garlic, crushed
- 3 Cups Stock (Chicken or vegetable)
- Salt and Pepper
- 1/2 Cup skim milk
- To Serve:
- Cream/milk
- Parsley
- Chunky/crusty bread

- 3/4 Cup buttermilk
- 1/4 Cup stevia
- 1 Egg
- 2 Cups flour (plain, or half plain, half wholemeal)

- 1/2 tsp salt
- 3 Tbsp butter, cubed and chilled
- 3/4 Cup chocolate chips
- Skim milk, for glazing
