Baby Bok Choy Soup

Separate leaves of bok choy and rinse the leaves
- 4 baby bok choy
- 1 onion, chopped
- 1 carrot, peeled and chopped
- 1 pint cherry tomatoes
- 1 litre chicken or vegetable broth
- 19 oz. can white kidney beans
- 2 tsp chopped fresh dill
- 3/4 c. farfalle pasta
Sweet Potato Soup with Yogurt and Feta

Saute onion, chili powder and garlic in a frying pan
- 3 tbsp olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 lbs. sweet potatoes, peeled and diced
- 2 large tomatoes, peeled and diced
- 3/4 c. plain yogurt
- 1/4 c. feta cheese, crumbled
- 1 tsp chili powder (optional)
- 8 c. vegetable broth
- freshly chopped parsley for garnish
