Preheat oven to 350 degrees
- 2 cups all-purpose flour
- 2 teaspoons pumpkin pie spice mix
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda {15 Cool Uses for Baking Soda}
- 3/4 teaspoon salt
- 2/3 cup canola oil
- 1 1/4 cups sugar
- 3 tablespoons water
- 1 cup canned pumpkin {I used pureed of course}
- 1 1/2 cup {soy} semi-sweet chocolate chips
Zucchini Pizza Crust

Once the zucchini has been grated and then chopped, you need 4 cups to make the two small pizzas in this recipe
- 4 cups grated then chopped fresh zucchini (one large zucchini about a foot long, or several smaller ones)
- 1/2 cup finely grated low-fat Mozzarella blend
- 5 T almond meal
- 3 T finely grated Parmesan
- 1 tsp. dried Greek or Turkish oregano
- 1/2 tsp. garlic powder
- pinch of salt
- 1 egg, beaten

Cook the garlic in oil in a large skillet over medium heat 1 minute, stirring until sizzling

Mix chicken, picante sauce or salsa, cumin, oregano, cheese and onions
- 2/3 cup picante sauce or your favorite salsa
- 1 tsp ground cumin
- 1/2 tsp dried oregano, leaves crushed
- 1 1/2 cup cooked chicken, chopped
- 1 cup cheddar cheese, shredded
- 2 green onion, chopped with some tops (about 1/4 cup)
