Zucchini Casserole

Preheat oven to 350°. Mix everything together in a bowl
- 4 cups grated zucchini
- 1 cup bisquick (using heart smart)
- 1 small onion, grated
- 3 egg whites, 1 whole egg
- 1/4 cup olive oil
- 1/4 cup grated parmesan cheese
- 1 tsp salt
- 1 tsp parsley
Lasagna Rolls

Preheat oven to 350°. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish
- 10 (9 oz dry) lasagna noodles, cooked
- 2 1/2 cups marinara sauce
- 5 cups kale, stems removed, chopped fine
- 8 oz mushrooms, chopped fine
- 1 tsp olive oil
- 2 cloves garlic, chopped
- 15 oz part skim ricotta cheese (I like Polly-o)
- 1/2 cup grated Parmesan cheese
- 1 egg, whisked
- salt and fresh pepper
- 3 oz (10 tbsp) part-skim mozzarella cheese, shredded
Slow Cooked Apple Butter

Place the apples in a slow cooker
- 2.5 lbs (6 large) apples, peeled, cored, finely chopped (I used honeycrisp and gala)
- 1/2 cup white sugar
- 1/2 cup light brown sugar
- 1 tsp ground cinnamon
- 1/8 tsp allspice
- 1/8 tsp nutmeg

Asparagus and Swiss Frittata

Steam asparagus crisp and tender, about 3 to 4 minutes
- 1/2 lb asparagus, tough ends trimmed off
- 1/2 cup shallots, chopped
- 2 tsp butter
- 3 large eggs
- 5 large egg whites
- 1 tbsp 1% milk
- 2 tbsp fresh grated Pecorino Romano
- 3 oz reduced fat Swiss cheese (I used Sargento)

- 3 cups jasmine rice, cooked
- 1/2 large onion, chopped
- 3 cloves garlic, minced
- 2 scallions, chopped
- 3 egg whites, scrambled
- 1 whole egg, scrambled
- 2 tomatoes, sliced
- 3 Thai chili peppers (optional)
- 4 tsp vegetable oil
- 4 tsp soy sauce (or more to taste)
- 2 tsp fish sauce
- salt and pepper
Crock Pot Sesame Honey Chicken

Place the chicken in the slow cooker and season with black pepper
- 2 lbs boneless, skinless chicken breast
- black pepper, to taste
- 1/3 cup low-sodium soy sauce (tamari for gluten-free)
- 1/4 cup honey
- 1/4 cup tomato paste
- 3 tbsp rice wine vinegar
- 2 cloves garlic, minced
- 1 tbsp water
- 1 tsp sesame oil
- 1 tsp onion powder
- 1 tsp sriracha hot chili sauce, or more to taste
- 1 heaping tbsp cornstarch
- 1/4 cup water
