Chickpea 'n coconut curry

Mix everything together in a saucepan
- 16 oz (2 cups) cooked chickpeas

- 1 medium carrot, diced
- 2 tsp turmeric

Cheeky chickpea burgers

Fruity Breakfast

Mash the yogurt and banana together until well blended
- 1/2 small banana
- 2 tbsp plain yogurt
- 1-2 tbsp fresh, ripe peach, peeled and cut into bite-size pieces

- 2 oz (1/2 cup) semolina flour
- 2-3 fl oz (1/3 cup) very warm water
- 1 tbsp olive oil
- around 6 oz (3/4 cup) butternut squash, peeled, cooked and mashed

Squash Pizza

Recipe: (makes one 30cm pizza)
- 3 Cups Mashed Butternut Squash (1 large squash)
- 1 Cup Almond Flour (if you want a nut free pizza, try using fine corn meal)
- 3/4 Cup Garbanzo Flour
- 1/4 tsp Sea Salt
- 1/8 tsp Black Pepper
- 2 Tbsp. plus 1 Tbsp. Ground flax
- 1 tsp Dried Oregano
- Toppings:
- Green Pizza Sauce (recipe below)
- A handful of pitted Kalamata olives
- 1 Cup cherry tomatoes (chopped)
- A couple of handfuls arugula, herbs, or baby beet greens
- * Or pizza sauce and toppings of choice
- Green Pizza Sauce
- Recipe:
- 1/4 Cup Cashews
- 1/2 Cup packed basil
- 1 Cup packed spinach
- 1/2 Lemon, juiced
- Sea Salt and Pepper to taste
- 8 Tbsp. Olive oil
- Directions:
- In a food processor puree the cashews, basil, and spinach until smooth. Add the salt, pepper, lemon juice, and oil, mix to combine.
Detox Salad

Yields 10 cups (lots for the whole week!!)
- 2 heads broccoli (1 bunch), stems removed
- 1 head cauliflower, stems removed
- 2.5 cups shredded carrots
- 1/2 cup sunflower seeds
- 1 cup currants
- 1/2 cup finely chopped fresh parsley
- 1/2 cup raisins
- 4-6 tbsp fresh lemon juice, to taste
- kosher salt, pepper to taste (1/4-1/2 tsp salt and lots of pepper)
- kelp granules or Herbamare (optional), to taste
- Pure maple syrup, to drizzle on before serving
Mini Crunch Bars with Peanut Butter Shell Drizzle

For the crunch bar: Line a 9x5 inch loaf pan with two pieces of parchment paper, one going each way

- - 1/2 cup coconut oil
- - 1/2 cup unsweetened cocoa powder
- - 5 tablespoons liquid sweetener (maple syrup, agave, etc.)
- - pinch of fine grain sea salt, to taste
- - 1 teaspoon pure vanilla extract
- - 1 cup rice crisp cereal
- Peanut Butter Shell Drizzle
- - 2 tablespoons all-natural peanut butter (or any nut/seed butter of choice)
- - 1.5-2 teaspoons coconut oil, as needed to thin out
- - 1 teaspoon liquid sweetener (maple syrup, agave, etc.)
Curried Pumpkin Soup

- - 2-3 chopped apples
- - 1 small chopped white onion
- - 2 tsp of coconut oil
- - 2 tsp of mild curry powder
- - 1 tsp of ginger
- - 1 L vegetable stock
- - 1 sugar pumpkin or Kabocha Squash
- - 1/2 tsp of cinnamon
- - 1/2 tsp of nutmeg
- * heat oven to 400 C
Raw Cookie Dough Bites

In a food processor, process the almonds, pumpkin seeds, oats, cinnamon and salt to a fine meal
- - 1/2 cup raw almonds
- - 2/3 raw pumpkin seeds/raw walnuts
- - 1/2 cup golden/green raisins
- - 2/3 cup quinoa flakes/GF oats
- - 1/4 tsp ground cinnamon
- - 1/2 tsp sea salt
- - 1/4 cup maple syrup
- - 2 tsp pure vanilla extract
- - 3 tsp cacaco nibs/dark chocolate chips
