Chicken with Ginger

Soak ginger in cold water 10 minutes; drain
- 1 three-inch piece fresh ginger peeled and cut into 1/8-inch-thick matchsticks (1/2 cup)
- 2 tablespoons canola oil
- 1 1/2 pounds boneless skinless chicken breasts cut into 1 1/2-inch chunks
- 1 large onion - thinly sliced
- 2 cloves garlic - minced
- 1/4 cup soy sauce
- 2 tablespoons white vinegar
- 2 tablespoons sugar
- 1/2 cup sliced scallions
Steak Pizzaiola

Generously season steaks on both sides with salt and pepper
- 4 small eye of round steaks, (each 6 ounces and 3/4 inch thick)
- Coarse salt and ground pepper
- 1 tablespoon olive oil
- 4 cloves garlic - minced
- 1 can (28 ounces) diced tomatoes
- 1 tablespoon chopped fresh oregano (or 1 teaspoon dried) plus more for garnish

Greek Chicken

In a medium bowl, combine onion and vinegar; season with salt and pepper
- 1 medium red onion - thinly sliced
- 2 tablespoons red-wine vinegar
- Coarse salt and ground pepper
- 3 boneless, skinless chicken breasts (1 1/2 pounds total) cut into 1-inch pieces
- 2 teaspoons finely grated lemon zest plus 4 teaspoons lemon juice (from 2 lemons)
- 2 teaspoons dried oregano
- 1/2 English cucumber halved crosswise and thinly sliced
- 2/3 cup nonfat plain Greek yogurt
- 1/4 cup chopped fresh parsley leaves
- 4 teaspoons extra-virgin olive oil
- 1 pint grape or cherry tomatoes halved (2 cups)
- Cooked long-grain white rice for serving

No-Bake Nutella Cheesecakes

In a medium bowl, stir together the Oreo cookie crumbs and melted butter
- 18 Oreo cookies - crushed into crumbs
- 2 tablespoons butter - melted
- Cheesecake:
- 12 ounces cream cheese - softened
- 1 cup nutella (chocolate hazelnut spread)
- 1 1/2 teaspoons pure vanilla extract
- 2 cups heavy whipping cream
- 3 tablespoons powdered sugar
- Garnish:
- Extra sweetened whipped cream - optional
- Crushed oreos or chocolate curls - optional
Zucchini Fries

- ½ cup all purpose flour
- 1 beaten egg with 1 egg white
- ½ cup panko breadcrumbs
- ¼ cup grated fresh Parmesan cheese
- ½ teaspoon smoked paprika
- Kosher salt and fresh ground black pepper
- 2 zucchini - sliced into ½ inch thick and 4 inches long
- Cooking spray
- Garlic herb mayo:
- ½ cup reduced fat mayonnaise
- 2 cloves garlic - finely chopped
- 1 tablespoon chopped parsley and chives

The Tastiest Macaroni Salad

Bring a large pot of water to a boil and add the peas
- Salad:
- 4 cups small pasta
- 3 cup minced celery (about 6 stalks)
- 3 cups tiny shelled peas - fresh or frozen
- 1 cup chopped fresh red bell pepper
- 1 cup thinly sliced green onion
- 6 hard-boiled eggs - chopped
- ¼ cup chopped dill or sweet pickles - optional
- Dressing:
- 1½ cups mayonnaise
- ½ cup buttermilk
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 tablespoon Dijon mustard
- 2 large cloves garlic - minced
- 1 teaspoon fine sea salt or more to taste
- freshly ground black pepper to taste
Cajun Spice

- 1 tablespoon sweet paprika
- 2 1/2 teaspoons salt

- 1 teaspoon garlic powder
