Hot Crab Spinach Parmesan Dip

Heat the cream cheese in the microwave for 30 seconds or so to make it stir-able
- 8 oz. Cream Cheese
- 1/2 Cup sour cream
- 1 Cup of grated Cheddar Cheese
- 3 Tablespoons of Mayonaise
- 2 Cloves minced garlic
- 1 Cup of chopped spinach (you can substitute frozen spinach, but make sure to remove all water)
- 1 can crab meat (Drain well)
- 1 Tsp parmesan cheese (a few shakes from a container)
Cotton Candy Ice Cream

In a large bowl whisk the 1/4th cup of sugar with the egg yolks until no more sugar is visible
- 12 egg yolks (you can use as little as 6 but it won’t be as rich)
- 1/4 cup sugar
- 1/4 tsp salt
- 2 cups heavy cream
- 6 oz package of cotton candy (one color is preferable) see note
- 2 tbs white sugar
- 2 cups milk
- 1 tsp vanilla extract
- Cotton candy for garnish
- Note:
- Cotton candy usually comes in 3 oz packages. If you only fine 4 oz bags or containers use a total of 8 oz cotton candy and omit the 2 tbs sugar.
Instant Chocolate Mousse

Put the marshmallows, butter, chocolate and water in a heavy-based saucepan
- 150 grams mini marshmallows
- 50 grams soft butter
- 250 grams dark chocolate (minimum 70% cocoa solids) chopped into small pieces
- 60 ml hot water (from a recently boiled kettle)
- 284 ml double cream
- 1 teaspoon vanilla extract
Miso Chicken

n large bowl, stir together miso, sesame oil and soy sauce until smooth; set aside 2 tsp for marinade
- 2 tsp (10 mL) miso paste
- 2 tsp (10 mL) sesame oil
- 2 tsp (10 mL) sodium-reduced soy sauce
- 2 tbsp (30 mL) light-tasting olive oil
- 2 tbsp (30 mL) unseasoned rice vinegar
- 3 cups (750 mL) broccoli slaw
- 1/2 sweet red pepper, thinly sliced
- 8 oz boneless skinless chicken
KFC Chicken

Sift together all the coating ingredients and place in a clean plastic bag
- 1 whole chicken, cut into pieces
- 3 beaten eggs
- 4 tablespoons oil
- For the coating
- 2 cups flour
- 4 teaspoons paprika
- 2 1/2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon poultry seasoning
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon tarragon
- 1/2 teaspoon garlic salt
- 1/2 teaspoon onion salt
- 1/2 teaspoon celery salt
Fettuccini Alfredo

Melt butter in medium saucepan with olive oil over medium/low heat
- 3 tablespoons sweet butter
- 2 tablespoons olive oil
- 2 garlic cloves - minced
- 2 cups heavy cream
- 1/4 teaspoon white pepper
- 1/2 cup grated parmesan cheese
- 3/4 cup mozzarella cheese
- 1 (12 ounce) box fettuccini pasta
Scalloped Potatoes with Sharp Cheddar

In a small sauce pan, melt butter and blend in flour
- 4 cups thinly sliced potatoes
- 3 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1 teaspoon salt
- 1 dash cayenne pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup grated cheese to sprinkle on top

Greek Potatoes

Preheat oven to 420°F Put all the ingredients into a baking pan large enough to hold them
- 8 large potatoes, peeled, cut into large wedges (about 6-7 wedges per potato)
- 4 garlic cloves, minced
- 1/2 cup olive oil
- 1 cup water
- 1 tablespoon dried oregano
- 1 lemon - juiced
- sea salt
- fresh coarse ground black pepper
