Crockpot Chicken Burritos

The best way to make a chicken burrito!
- 3 large frozen chicken breasts
- 4 cups salsa
- 2 can black beans, drained
- Cumin
- Garlic Salt
- 3 cups rice, cooked
- 12-24 tortillas (depends on the size)
- Cilantro
- Fiesta blend cheese
- Guacamole (Optional)
- Foil or plastic wrap, if storing in fridge or freezer.
Ham and Swiss Sliders

Basic ham and swiss sliders, with a twist!
- 20 white dinner rolls
- 20 pieces honey ham
- 20 small slices Swiss cheese
- Mayonnaise
- Miracle whip
- Sauce:
- Poppyseeds - amount depends on preference
- 1 1/2 Tablespoons yellow mustard
- 2/3 cup butter melted (don't need to be too exact!)
- 1 Tablespoon minced onion
- 1/2 teaspoon Worcestershire sauce
Mini Fruit Pizza

- 1 Package Sugar Cookie Dough
- 1 8 oz package cream cheese, softened
- 1 large container cool whip
- 4 cups of any kind of fruit (or more if you want)
- Mini-muffin pan
- 1 gallon-sized Ziploc bag

- 2 cans (about 15 ounces each) pinto beans , rinsed and drained
- 1 1/2 cup salsa
- 1/4 teaspoon garlic powder or 1 clove garlic, minced
- 2 cans (about 15 ounces each) black beans , rinsed and drained
- 2 small tomatos, chopped (about 1 cup)
- 7 flour tortillas (8")
- 8 ounces shredded Cheddar cheese (about 2 cups)
- Chopped fresh cilantro leaves - amount is based on preference
Taco Pizza

This is one of my all-time favorite pizza recipes
- 1 pound lean ground beef
- 1 envelope taco seasoning mix
- 1 (10 ounce) can refrigerated pizza dough
- 1 (16 ounce) can refried beans
- 2-3 cups shredded fiesta-blend cheese
- 2/3 cup chopped tomatoes (about 3 roma or 1 large)
- 1/4 cup sliced black olives
- 4 green onions, chopped
Simplistic Mexican Pasta

A very simple and easy (almost one-dish) Mexican pasta dish that even a die-hard pasta hater will enjoy!
- 1 tablespoon olive oil
- 1 pound ground turkey or beef
- 1 (15-ounce) can tomato sauce
- 2 cups salsa
- 2 cups cooked elbows pasta
- 1 Roma tomato, diced
- 1 cup canned black beans, rinsed
- 1/2 cup shredded Fiesta-blend cheese
- 2 tablespoons chopped fresh cilantro leaves
Chicken and Wild Rice Soup

Delicious soup from scratch, with WAY more flavor than any canned soup!
- 2 cups wild rice (cooked)
- 1/4 cup vegetable oil
- 1/2 onion, finely chopped
- 2 large carrots, peeled and chopped into bite-sized chunks
- 2 large stalks of celery, chopped
- 1 tsp thyme, or to taste
- 3/4 cup flour
- 8 cups chicken stock
- 2 medium chicken breasts, cooked and cubed
- 8 oz mushrooms, stems removed and sliced
- 1 cup half-and-half
- Chopped parsley (optional)
- Salt and Pepper
Cream Cheese Banana Nut Bread

Your regular banana nut bread with some added cream cheese for added deliciousness!
- 3/4 c. butter, softened
- 1 (8 oz.) pkg. cream cheese, softened
- 2 c. sugar
- 2 large eggs
- 3 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 cups mashed bananas (about 4 medium bananas)
- 1 cup roughly chopped pecans, toasted
- 1/2 tsp. vanilla extract
Jambalaya

A Cajun staple, this is a very easy recipe and one that even the newest cook can achieve
- 2 tbsp butter
- 16 oz Andouille sausage, or other spicy smoked sausage, sliced 1/4 thick
- 2 tbsp paprika
- 1 tbsp ground cumin
- 1/2 tsp cayenne pepper
- 1/2 tsp fresh ground black pepper
- 1 tsp salt
- 1/2 cup diced tomato, fresh or canned
- 1 large green bell pepper, diced
- 2 ribs celery, sliced 1/4 thick
- 4 green onions, sliced thin
- 2 cup brown rice
- 5 cups chicken broth
Chicken Bundles

Chicken bundles are delicious dough pockets filled with cream cheese, sesame seeds and more
- 4 oz. cream cheese, softened
- 1-13 oz. can chicken (or equivalent cooked chicken, rotitsserie chicken, etc)
- 1 Tbs. sesame seeds
- 1/4 tsp. parsley
- 2 cans Pillsbury Crescent Rolls - leave in fridge until ready to use!
- 1 Tbs. finely chopped onion or dried minced onion
