- · 1 pound fresh peas
- · Scant 1/2 cup olive oil
- · Scant 1/2 cup crème fraîche
- · 2 cups of chicken stock (I used a chicken bouillon cube)
- · 3 sprigs of mint
- · Salt and pepper

Step 1
Shell peas. Cook in boiling water for 20 minutes then cool. Wash mint leaves and dry them. Prepare your chicken stock using the bouillon cube. Mix it with peas and mint leaves. Salt. Strain. Then add olive oil and continue mixing. Serve cold as a traditional gazpacho.
