- 2cups chopped up vegetable
- 1/2 onion chopped or 2 green onions chopped
- 1 tblsp margarine
- 1tblsp flour
- 1cup milk

Preparation
Step 1
Cook chopped vegetables in water until tender and set aside.
Step 2
While vegetables are cooking ,melt margarine in saucepan and add flour. Cook and stir until bubbly.
Step 3
Add milk to flour mix and cook and stir until thickened.
Step 4
Either use a hand blender or fork mash the cooked vegetables with the cooking water.(the cooked vegetables can also be left whole)
Step 5
Mix the two mixes together and heat thoroughly. Add seasonings that match vegetable used. Add cheese if wanted and serve.
Vegetables to use can be broccoli,carrot,cauliflower,asparagus,beans,potatoes,squash. This does not work well with peas. A blend of vegetables can also be used. Add more milk for a thinner soup.
