here is my low fat version of "golubtsy" stuufed cabbage rolls with a twist to my grandma's recipe, enjoy!

  • 1 large head of cabbage
  • 1 lb of lean ground turkey
  • or ground chicken
  • 1/3 cup uncooked rice
  • 1/2 cup chopped onion
  • 1 large carrot shredded
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp ketchup
  • 1 tsp minced fresh garlic
  • 4 tbsp of extra virgin olive oil
  • 1 16 oz can of tomato sauce
  • 1/2 cup chicken stock
  • 1 tbsp low fat sour cream

Here is a Russian twist on the traditional deviled eggs

  • 8 hard-boiled eggs
  • 2 generous tablespoons fat free or light sour cream
  • 1 tablespoon fat free or light mayonnaise
  • 1 teaspoon Dijon mustard
  • A small jar of red or black caviar (I think I used a total of about 3 tablespoons of caviar for this recipe)
  • 1/3 teaspoon of salt
  • 1 tablespoon of chopped fresh dill
  • Peel the eggs and cut lengthwise into halves.

Here's a low fat version of my Grandma Katrina's russian beet salad called "vinegret" enjoy!

  • 1 lb cooked beets, peeled and diced
  • 1/4 cup sour cream fat free
  • 4 tbs mayonnaise fat free
  • juice of half a lemon
  • 2 tsp sugar
  • salt and pepper to taste
  • 1 handful chopped fresh dill or parsley for garnish
  • 1-2 scallions
  • 1-2 dill pickles
  • 1 hard boiled egg
  • 1 small cucumber peeled and cubed
  • extra virgin olive oil

Blend the flour and 1/2 tsp salt

  • For the noodle dough:
  • 2 cupsunbleached all-purpose flour
  • salt, to taste
  • 2 large egg yolks
  • 1 tablespoon vegetable oil

Here is my grandma Katrina's russian recipe for stuffed cabbage rolls, only I made them healthier!

  • 1 big loose head of white cabbage
  • 1 lb turkey ground
  • 1 + 1 onions, chopped
  • 1/2 cup rice pre-boiled in 2 cups of water( I omit this for a low carb option)
  • 1 small carrot, finely grated
  • 2 big ripe tomatoes, diced
  • 3 tbsp olive oil
  • Salt
  • Pepper
  • Red pepper (optional)
  • Filtered water, about 1 - 1 1/4 cups
  • 1 big pot to boil cabbage
  • 1 frying pan
  • 1 Dutch oven or big shallow pot with lid
  • Preparation time: about 2 hours

Here is a low fat version I made of my grandma katrina's "piroshki" traditionally they are meat and cabbage filled ...

  • 1 medium head cabbage grated ( I grade this on a cheese grater the old stand up aluminum kind)
  • 1 onion, chopped
