Creamy New England Style Cheesy Clam Chowder

Adapted from my mothers simple clam chowder recipe
- 3 dozen well scrubbed cherrystone clams
- 4 cups water
- 6 rashers fine chopped bacon
- 1 medium fine chopped red onion
- 1 medium fine chopped white onion
- 1 fine chopped carrot
- 2 stalks fine chopped celery with stringy ribs removed
- 2 teaspoons chopped thyme or 1/2 teaspoon dried
- 1 tablespoon chopped flat leaf parsley
- 2 pounds peeled Yukon gold potatoes cut in 1" cubes
- 1 cup grated Monterey jack cheese
- 2 cups heavy cream
- 1/2 teaspoon Tabasco or other hot sauce
- Coarse sea salt and fresh ground black pepper to taste
- Garnish with coarse chopped flat leaf parsley and pats of butter

This chowder is perfect for me if were talking about consistency
- 2 slices of bacon (not smoked, salt pork)
- 2 bay leaf
- 1 cup chopped onion
- 1 cup chopped celery
- 2 cups potato
- 1 cup carrot (can replace with another cup of potato)
- 4 cups half and half (mix 1/4 cup whipping cream to 3/4 cup whole milk per cup)
- 2 cans chicken broth (no salt)
- 2 cans clams with liquid
- 1 can of hot water
- 1 can worth of mini scallops (can replace with a 3rd can of clams)
- 1/3 cup of butter
- 1/2 cup of flour
Simple Potato Soup with Bacon

1/2 cups cheddar cheese 1 pkg bacon 1 1/2 tsp Olive Oil 1/2 tsp salt 1/2 cups onions 1 stalk celery 4 cups ch
- Cook bacon , drain on paper towel
- sauté onions and celery add broth and potatoes
- bring to boil then reduce heat
- simmer covered for 10 to 15 mins
- stir in cheese
- keep heated till cheese melts
- after cheese melts remove from heat and add bacon
