In the bowl of your blender, add 1 onion cut in half, 1 clove of garlic and the aromatic herbs of your choice (parsley, chives, thyme). Give a good pulse to grind everything up. Then add 8 ounces of butter cut into cubes, a pinch of salt and the juice of 1 lemon. Blend until the mixture is smooth. Pour into a bowl and store in the fridge until ready to use. Spread on warm toast or melt over steak or vegetables. Don't hesitate to vary the recipe by adding spices, nuts, etc.
