Fish

Whole fish dishes are always on the menu for Chinese New Year, as its Chinese name yu is pronounced the same as the word for "surplus," so it is linked to abundance of food and wealth—the idea that if you have saved enough at the end of the year, you will continue to make more in the year to come. Steamed fish is especially popular, though it can also be served boiled or braised. More importantly, the head should always be pointed toward the elders or respected guests at the table, as a sign of respect.

Here's a quick guide to cooking perfect fish every time.
