Softening Your Butter in the Microwave for Creaming

Don't soften your butter in the microwave. You want it to be room temperature, or between 63° and 68°. If it gets warmer than 68°, it won't cream the way it should. Instead, grate the butter, and it will reach room temperature quickly. It should be soft and pliable yet not melted. Keep this tip in mind anytime you're baking cookies that call for softened butter.
