Making Guacamole Too Far Ahead of Time

Guacamole done right is a fiesta of deliciousness in your mouth. But it should never be prepared too far in advance. As soon as you cut open a ripe avocado, its flesh gets exposed to oxygen, which prompts the browning process. If you must prepare your guac say, an hour before party time, then place it in the fridge with plastic wrap directly touching the surface to keep that O2 out.
