Not being careful with raw egg dishes

Eggnog, fresh mayonnaise, aioli, health shakes with raw egg, steak tartar, uncooked desserts such as mousses or tiramisu, and hollandaise sauce all contain raw egg which can cause food poisoning due to salmonella. If preparing one of these dishes, you should always check your eggs carefully and if you see any cracks, throw out the eggs or use them in a dish that will be cooked thoroughly, such as a cake.

Prepare these foods just before you are going to serve them and refrigerate immediately at 40°F or below to prevent bacteria from growing. Extra tip: Avoid serving these raw egg dishes to anyone with a compromised immune system—small children, pregnant women and the elderly as these groups are more susceptible to food poisoning.

For cooked egg dishes, make sure they reach 160°F.
