Not keeping food out of the temperature 'danger zone'

Harmful bacteria multiply quickly in food that is left at a temperatures between 40°F and 140 °F. That means you should always store refrigerated food at 40°F or lower. Hot food should be kept hot, so if you're keeping it warm for someone, place it in the oven at 140°F or slightly above. To store food that will not be eaten immediately, the temperature should be reduced as quickly as possible. Transfer it to containers in the fridge or freezer, as soon as it's cooled down (it should no longer be steaming).
