William Henry Harrison Would Often Eat This Kind Of Stew...

Squirrel Stew. Harrison was only president for a month before his death, but he especially loved "Burgoo" stew for its adaptability to feeding large crowds. It's a hearty, spicy meat and vegetable stew typically made with tomatoes, corn, okra, lima beans, cabbage and potatoes. While squirrel or other game meats were commonly used back in Harrison's day, it's mostly cooked with chicken, pork or mutton today (phew).

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
