Ukraine: Varenyky for Christmas

Varenyky are one of the 12 sacred dishes for traditional Ukrainien Christmas dinners. They can be stuffed with all kinds of sweet or savory fillings, including cheese, mushrooms, cooked or raw cabbage, poppy seeds (which symbolize wealth and prosperity), apples, jam, etc. On Christmas Eve, some Ukrainians play a little game with their varenyky by adding a pinch of pepper in one varenyk, a lump of sugar in another and a coin in a third. Whoever ends up eating the sugar one will have a sweet life, and whoever eats the one with the coin will be rich. Try this recipe for savory varenyky with a savory potato filling, topped with crispy bacon and caramelized onions.

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped

  • Cheddar

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.

  3. Fold up tortillas, and heat in a frying pan until golden.
