Tan Tan Noodles (Tantanmen Ramen)

Tan Tan noodles are the Japanese version of Chinese-Sichuanese dandan noodles. Like the latter, tan tan noodles may be served dry or with a rich broth. This recipe opts for a sort of in-between version with just enough liquid to coat the noodles in a spicy, creamy broth that gets its velvety texture from peanut butter.
