- 1 tbsp vegetable oil
- 1 red or green bell pepper, sliced thinly
- 1 cup carrots, grated
- 4 green onions, sliced
- 1 tbsp curry paste (yellow or green)
- 1/2 cup water
- 1/2 cup coconut milk
- 3.5 oz instant ramen or soba noodles
- 8 oz. cooked chicken
- 1 tbsp lime juice
- 4 tbsp fresh cilantro, roughly chopped
