Common Pressure Cooker Mistakes that Can Ruin Your Recipes

Adding thickeners

Don't add thickeners to your soups, stews, or sauces before cooking in the pressure cooker. Doing so can diminish the amount of steam that builds inside, and in order for the device to function properly, it needs plenty of steam! This can also happen if the sauce or liquid itself is too thick on its own. To remedy the problem, simply add more water or broth (not a lot!). Otherwise, any thickeners like cornstarch, potato starch, arrowroot, flour and roux, should all be added after the cooking processed is finished.
