Unless you have severe allergies or need to make health-related dietary requests, always try to stick to what's on the menu. Most restaurants allow you to swap sides (sometimes at an added charge), request sauces on the side or omit certain ingredients in dishes that are made to order. Those are all pretty reasonable requests, but asking for multiple changes to dishes that basically transforms them into something else entirely is only going to make your server's—and the kitchen's— job harder.
