Chicken noodle soup
For top-notch homemade chicken noodle soup, here a few things to know. Stop using only breast meat. Other parts of the chicken, like the thighs, are more rich in flavor. Use a combination of pieces for best results. Also don't dump all the veggies in at once. Just like when you saute vegetables, some cook up quicker or slower than others. Add the robust vegetables first, then drop in the fast-cooking veggies at the end (like spinach or peas). Most importantly, add the noodles toward the end of the cooking process, when the soup is almost ready. This will prevent you from slurping up soggy, overcooked noodles.
