Vegetable Omelette

Omelets are one of the most customizable brunch dishes out there. Beat 2-3 whole eggs in a mixing bowl (seasoned with salt and pepper), and  set aside. Heat a little bit of olive oil in a pan over medium, and add 1/4 cup sliced button mushrooms. Let cook until the mushrooms are lightly browned and have released their liquid. Add 1/4 cup baby spinach leaves, and cook until mostly wilted. Pour in the beaten eggs, and swirl the pan to make sure they cover the whole surface. Let cook until the edges are set, and the eggs are cooked through. Feel free to sub in whatever veggies you have on hand.

  • Cheddar cheese
  • Mozarella
  • 1 baguette
  • Sun-dried tomatoes
  • Bacon

METHOD

  1. Cut your cheeses into thin slices
  2. Slice baguette down the middle (like a sandwich)
  3. Layer cheddar, blue, and mozarella cheese inside the bread
  4. Top with sun-dried tomatoes
  5. Close baguette and wrap with bacon strips
  6. Put in oven and bake for 20 minutes at 350 degrees
  7. Slice and serve!
