April Fool's: Recipes that Aren't What They Seem

Surprise Fries

Fool the whole family with these "fries" that aren't what they look like! Made with apples, they're a fun and healthy alternative to regular potato fries and are served with a sweet "ketchup" dipping sauce on the side.

Ingredients (for 3-4 servings):

For the fries:

  • 2/3 cup butter, brought to room temperature
  • 1 cup powdered sugar
  • 1 egg, beaten
  • 1 1/4 cups flour
  • 1 tsp turmeric
  • 2 pinches of salt

For the "ketchup":

  • 2/3 cup applesauce
  • 1/2 cup strawberry coulis
  • Red liquid food coloring (optional)

 

Instructions 

  1. Preheat the oven to 400°F.
  2. For the fries: Cream the butter with the powdered sugar in a bowl.
  3. Add the beaten egg and stir to combine. Add the flour, turmeric and salt.
  4. Between two sheets of parchment paper, roll out the dough into a rectangle of 0.7 cm to 1 cm max thickness. Place the dough in the freezer for 5 minutes.
  5. Remove the dough from the freezer and cut into fries.
  6. Spread the fries out on a baking tray lined with parchment paper and bake in the preheated oven for about 15 minutes. Remove and let cool slightly.
  7. For the ketchup: Combine the applesauce with the strawberry coulis. If you like, you can add red food coloring for a stronger color.
  8. Enjoy!

Ingredients

  • 1/2 cup rice vinegar
  • 2 tbsp sugar
  • 2 cups cooked sushi rice
  • 1 cup soy sauce
  • 1/4 cup chopped cilantro
  • 2 tbsp seasame oil
  • 1 tsp chili paste
  • Salt
  • 1 mango, diced
  • 1 avocado, diced
  • 1 lb salmon, diced

Method

  1. Combine the rice vinegar and sugar.
  2. Stir though the cooked sushi rice, and with wet hands, shape into balls.
  3. Press the balls into ramekins lined with parchment paper, and press the rice up the sides of the ramekins into cup shapes.
  4. Refrigerate for 15 minutes.
  5. In the meantime, combine the soy sauce, cilantro, sesame oil, chili paste and salt in a bowl.
  6. Combine the mango, avocado and salmon.
  7. Pour the soy mixture over the salmon mixture, and stir through until evenly coated.
  8. Remove the rice cups from the refrigerator, and peel off the parchment paper.
  9. Distribute the salmon mixture between the rice cups.
  10. Garnish, serve and enjoy!
