Refreshing Iced Tea

It's an American picnic staple, and the beverage that brings everyone together! Give this super easy recipe a go, and treat your family and friends to a cup of zesty iced tea. The perfect pick-me-up after an afternoon basking in the rays.

Ingredients (for 10 people):

  • 8 cups boiling water
  • 10 orange tea bags
  • 1/2 cup honey
  • 2 fresh lemons
  • A bunch of fresh mint
  • Crushed ice 
  1. Add the teabags to the hot water in heatproof glass or in a ceramic container. 
  2. Whilst it's hot, stir in the honey.  Cut 1 lemon into slices, and add to the tea. Cut the other lemon into slices, and place in a safe, transportable container to use at the picnic.
  3. Let the tea sit at room temperature for 10 min. and then transfer to the refrigerator for 2 hours. 
  4. Once done, place the tea in a large vacuum flask. Separately, put the ice in a leakproof zip- lock bag and place in a cooler. 
  5. Take to your gathering, add the additional lemon slices, serve over the ice, and garnish with the mint springs.
  6. Drink, enjoy, and feel refreshed!

These fun Tropical Salmon Sushi Cups make the perfect warm-weather appetizer!

 

Ingredients

  • 1/2 cup rice vinegar
  • 2 tbsp sugar
  • 2 cups cooked sushi rice
  • 1 cup soy sauce
  • 1/4 cup chopped cilantro
  • 2 tbsp seasame oil
  • 1 tsp chili paste
  • Salt
  • 1 mango, diced
  • 1 avocado, diced
  • 1 lb salmon, diced

Method

  1. Combine the rice vinegar and sugar.
  2. Stir though the cooked sushi rice, and with wet hands, shape into balls.
  3. Press the balls into ramekins lined with parchment paper, and press the rice up the sides of the ramekins into cup shapes.
  4. Refrigerate for 15 minutes.
  5. In the meantime, combine the soy sauce, cilantro, sesame oil, chili paste and salt in a bowl.
  6. Combine the mango, avocado and salmon.
  7. Pour the soy mixture over the salmon mixture, and stir through until evenly coated.
  8. Remove the rice cups from the refrigerator, and peel off the parchment paper.
  9. Distribute the salmon mixture between the rice cups.
  10. Garnish, serve and enjoy!
