Homemade Eggo Waffles

First invented in 1953, the trademark frozen waffle has been an American treat for generations. The waffles could be cooked, frozen, and then packaged to be sold - a revolutinary process for the time and a game-changer for busy families. Sometimes food tastes better when it's made from the heart of the home though, so why not try making your own and home this weekend?

Ingredients (for 16 people):

  • 1/2 cup butter cut into pieces
  • 1 3/4 cups buttermilk
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • Mini waffle maker
  • Maple syrup (optional)

Instructions:

  1. Place the butter and buttermilk in a small bowl, and heat in the microwave until all is melted.
  2. Whisk in the vanilla, and set aside.
  3. In another bowl, beat the eggs until they're fluffy. Add in the buttermilk mixture and stir, before adding the flour, baking powder, salt and sugar. Stir until well mixed and a batter is formed.
  4. Allow to sit for for 5 min.
  5. Preheat the mini waffle maker. Pour 1/4 cup of batter into the maker, and cook for 4 min.
  6. Rempve from maker and allow to cool. Serve with maple syrup if desired and enjoy!
