Spicy Crockpot Chili

A crockpot is a kitchen blessing, and a good chili is a go-to recipe. But sometimes it can get a little repetative, so why not add a little kick? Serve with rice or in soft tortillas alongside salsa and guacamole dips and feel the burn!

Ingredients (for 6 people):

  • 1 lb. ground beef 
  • 14.5 oz. can of diced tomatoes
  • 14.5 oz. can kidney beans
  • 1 sachet chili seasoning 
  • 1 1/2 tsp chili powder

Instructions:

  1. Brown your ground beef on the stovetop
  2. Drain meat and add to your crockpot. 
  3. Add all other ingredients and stir  
  4. Put on low in your crockpot to cook all day but at least for 4 hrs minimum.
  5. Serve with a slice of lime and enjoy!

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
