Spicy Roasted Aubergine and Tomato

This dish will make you feel like your basking under the Mediterranean sun! Super healthy, it's sure to make your belly happy too, and is sure to be a treat for the senses with its exotic flavor and spicy kick. Serve with grilled halloumi slices and a fresh salad.

Ingredients (for 2 people):

  • 14.5 oz. can of diced tomatoes
  • 1 red onion (chopped)
  • 2 tbsp harissa paste
  • 1 aubergine (sliced)
  • 3 tomatoes (sliced)

 Instructions:

    1. Preheat the oven to 400°F.
    2. Drizzle olive oil in a roasting pan, and put in oven for 5 min.
    3. Mix the diced tomatoes, onion, and harissa paste in a bowl.
    4. Remove the warmed pan and layer the aubergine slices with the tomato on top. Pour over the diced tomato mix and roast everything for 50 min.
    5. Once done, sprinkle over a handful of cilatro and serve up with couscous, a dollop of yoghurt and a sprig of basil.

  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
