Spicy Sausage Pasta Bake

Pasta bake is the ultimate comfort food, and everyone loves a spicy sausage! Pair the two in this recipe, and get your carb' and spice fix in one. Our fave sausage to use is traditional Italian Nduja sausage. It's soft so melts into the bake, and packs the biggest punch, but you might need to seek out a traditional Italian deli for that. If you can't get your hands on it, any sausage with a kick will do.

Ingredients (for 6 people):

  • 1 lb. rigatonni pasta
  • 1 lb. hot/spicy sausage (sliced)
  • 3 cups tomato pasta sauce
  • 1 cup parmesan cheese (grated)
  • 8 oz.mozzarella cheese (diced) + 1 cup mozzarella cheese (shredded)

Instructions:

  1. Preheat oven to 350°F.
  2. Cook the pasta until it's al dente. Drain and set aside in a large bowl.
  3. Add a tbsp of oil to a large skillet, and put on medium-heat. Add the sliced sausage.
  4. Once done, remove the sausage from the heat and add to the pasta.
  5. Mix in the pasta sauce, and add 1/2 cup parmesan cheese and the diced mozzarella.
  6. Pour the mixture into a baking tray, and sprinkle in with the remaining parmesan cheese and the shredded mozzaralla.
  7. Cover tightly with alluminum foil, and bake for 45 min. until the cheese is bubbling.
  8. Remove, allow to cool, then serve with buttered garlic bread and an Italian salad.
  9. Enjoy!
