Curried Butternut Squash Soup

Soup is usually a fall fave, but this recipe is tasty enough to be eaten all year round! We wouldn't turn a bowl down during the summer months, and if you're cooking for guests, we doubt they will either. The perfect mix of curry powder and coconut cream, this is a warm hug in a bowl.

Ingredients (for 4 people):

  • 4 cups butternut squash (cubed)
  • 1 tbsp butter
  • 1 onion (chopped)
  • 2 cups coconut cream
  • 2  tsp curry powder

Instructions:

  1. Preheat oven to 375°F.
  2. In a roasting tin, evenly spread the butternut squash. Drizzle with olive oil and season with salt and pepper. Roast for 30 min.
  3. Meanwhile, heat up the butter in a medium-sized pot over medium-heat. Add the onion and saute.
  4. Once the squash is done, add to the pot along aith the coconut cream and curry powder. Using an immersion blender, thoroughly mix the ingredients.
  5. Heat over medium-heat for 5 min. until it's delicately bubbling ans serve immediately with crusty white baguette.

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped

  3. Fold up tortillas, and heat in a frying pan until golden.
