Souvlaki are pork skewers that were apparently enjoyed by the Ancient Greeks! The meat is marinated in a mixture of oregano, salt, pepper, and lemon juice. It's then threaded onto wooden skewers, and grilled over charcoal embers. The pork can be substituted with chicken or lamb.
Ingredients (for 12 skewers):
2 lbs. pork steaks (boneless)
1/2 cup lemon juice
2 cloves garlic
1 tbsp oregano
1/2 tsp salt
1 tsp ground black pepper
1 tbsp olive oil
12 wooden skewers
Instructions:
Preheat grill to 400°F. Cut the pork into 2cm thick cubes.
Peel and finely chop the garlic.
In a bowl, mix the lemon juice, garlic, oregano, salt, pepper, and olive oil so a marinade is formed.
Place the pieces of meat in a bowl and pour over the marinade. Cover and refrigerate for 2 hours.
Meanwhile, soak the wooden skewers in water to prevent them from burning later on the grill.
Thread the meat onto the wooden skewers and place on the hot grill for 3 mins. each side.
