Grilled fish tastes especially delicious in this Japanese-style, sweet and salty marinade.

Ingredients (for 6 people):
6 pieces salmon steak (approximately 8 oz. each)
3 tsp sugar
3 tbsp sake (alternatively white wine or mild sherry)
3 tbsp rice wine (mirin)
6 tbsp soy sauce
Instructions:
Remove skin and bones from salmon steaks.
In a deep dish, whisk together sake, rice wine, soy sauce and sugar until the sugar dissolves. Place the salmon steaks in the teriyaki sauce for 10 mins. turning often.
Drain the steaks and place on the hot grill. Grill for 3 mins. each side, and drizzle with the remaining marinade
