Eggs Florentine with Avocado on English Muffins

Yes, this recipe can actually be made in a way that's good for your heart! The eggs and avocado are packed with healthy oils that work wonders for the vital organ, so combined, they're even better. They're the perfect recipe for a lazy morning, and are great paired with a cold glass of fresh orange juice. Ah!

Ingredients (for 1 person):

  • 1 English muffin
  • 1 avocado
  • 2 eggs
  • Aragula (optional, for garnish)
  • Chili flakes (optional, for garnish)

Instructions:

  1. Fill a medium-sized pot with water and bring to the boil. Break an egg into a cup.
  2. Swirl the boiling water with a spoon, and slip the egg into the water.
  3. Repeat with the second egg and gently poach the eggs for 3 mins. Remove with a slotted spoon.
  4. Cut the muffin in half and toast
  5. Pit the avocado, and neatly scoop out its contents so that it keeps its shape. Slice lengthways.
  6. Dress a plate with aragula leaves, then place the muffin on a plate and arrange the sliced avocado on top.  Place the poached eggs on top of each half, and sprinkle the chili flakes over.
  7. Serve and enjoy!
