Delicious Seasonal Fruit and Veg to Try This August

Peas

When freshly harvested peas are on your plate, you're in for something special. Their nutty taste is unique, but goes well with so many other foods. Why not try our pea and mint gazpacho recipe, it's the perfect pick-me-up after a day in the heat.

Ingredients  (for 4 people):

  • 1 lbs. fresh peas
  • 1/2 cup olive oil
  • 1/2 cup crème fraîche
  • 2 cup chicken stock 
  • 3 sprigs of mint
  • Salt and pepper

Intructions: 

  1. Shell the peas and cook in boiling water for 20 mins. Allow to cool.
  2. Wash mint leaves and dry them. Prepare your chicken stock using the bouillon cube.
  3. Mix it with peas and mint leaves. Salt. Strain.
  4. Add olive oil and continue mixing.
  5. Serve cold as a traditional gazpacho.

Combine summer zucchini with leftover mashed potatoes for a delicious, savory treat!

INGREDIENTS

  • 5 Potatoes
  • 1.5 Cup shredded zucchini
  • 3/4 Cup shredded cheese
  • 3/ Cup milk
  • 1/3 Cup coriander, chopped
  • 1/3 Cup basil, chopped
  • Parmesan, to sprinkle
  • Salt and pepper, to season

METHOD

  1. Chop the potatoes in half, boil until very tender and drain.
  2. In a bowl, combine the potatoes and zucchini. Add the grated cheese, milk, coriander, basil, salt and pepper, and mix thoroughly. 
  3. On a baking tray, spoon out the zucchini-potato mixture and form into balls. 
  4. Sprinkle with Parmesan and grated cheese, and bake at 350°F for 15 minutes.
  5. When golden, remove from oven... and enjoy!
